Sapwood Cellars Brewery

Sapwood Cellars is a brewery with a tasting room bar in Columbia, Maryland, specializing in fresh hoppy ales, barrel-aged sour beers, and low intervention ciders. They take their name from sapwood, the delicate new growth just under a tree’s bark that carries water and nutrients between the leaves and the roots; and cellar, a term for a fermentation space that also evokes the cool, quiet resting place of barrels.

Their ciders are made using regionally grown apples such as York, Ida Red, Gold Rush, and Ashmead’s Kernel. The cider is allowed to age, some in Chardonnay barrels, for an extended period of time to develop rich and balanced flavors.
